PLANT BASED RHODE ISLAND DRESSING

Ingredients
1 cup of pre- soaked cashews (soak for 4-6 hours)
1 tsp. of nutritional yeast
1/2 cup of water (for blending)
Pinch of salt (Himalayan)
Pinch of pepper
1 tbs. of dill chopped
1 tsp. of finely chopped red onion
1tbs. of chopped gherkins (preferably crunchy)
1 tbs. of tomato pure (best you can get hold of)
Method
Blend cashews, water, salt and nutritional yeast in a blender. If you need more water to get a smoother mix add some in.
Place in a bowl and fold in finely chopped dill, red onion, gherkins, tomato pure, and finish off with a pinch of pepper.
Use straight away or store in a glass jar in fridge until ready to use. This is a great creamy dressing that goes well with any salad or as a creamy topping on open sandwiches!
